To use the custom fields menu:
Select the type of field you wish to use. The preview will populate below.
Select the data type.
Select a name for the field.
Give your new field a description.
This toggle will apply all options for where to show the field. Be careful not to show any private data where it shouldn't be shown. Its a good idea to read each option to decide. Note that the admin will always be able to see the fields even if no is selected.
This is the required text that will be show if the field is not filled.
Click save.
Now if you check back in the "Contestant Custom Fields" tab, you will find your new field. Head over to the Add Fields to Submit Entry Tab tab to apply them.
